Blueberry Pancake

Pancake with fresh blueberries






Ingredients:
(A)
120 gm / 1 cup plain flour
1 teasp baking powder
1/2 teasp bicarbonate of soda
2 tabsp sugar

(B)
1 cup buttermilk or 1/2 cup milk & 1/2 plain yoghurt
1 egg
1 tabsp melted butter

Fresh blueberries

Method:
  • Put (A) in a mixing bowl and pour in (B). 
  • Mix well to blend. Strain if batter is lumpy.
  • Heat a pan with little oil or butter. 
  • Pour in one scoop of batter and put in the blueberries.
  • Let it cook till bubbles appear and slowly flip over to cook the other side.
  • Serve with honey or maple syrup and more fresh blueberries.
