Nam Yee Biscuit (Kai Chai Paeng)










Ingredients:

300 gm plain flour, sifted
1 teasp baking powder
70 gm icing sugar
1/2 teasp salt
2 teasp. garlic powder or 1/2 tabsp. crushed fresh garlic
35 gm nam yee (red fermented beancurd)
1 egg
30 gm golden syrup or honey
60 gm sesame seeds
70 gm candied melon strips , finely chopped
Dash of pepper
1/2 teasp 5 spice powder
60 gm cooking oil

Method:
  1. Preheat oven at 180 C.
  2. Combine all the ingredients in a large basin.  Mix well into a soft dough.  Rest 30 minutes.
  3. Make into small balls.  Place each between two sheets of cling wrap.  Flatten.
  4. Transfer onto prepared trays and bake for 10 minutes or15 minutes for a crispier texture.
  5. Cool.  Store in airtight container.
