Prune Cupcakes




 Ingredients:

(A)
150 gm prunes - cut into small pieces
1 tabsp rum liquer
1 teasp vanilla essence
100 gm brown sugar
1 teasp soda bicarbonate
50 ml fresh milk

(B)
3 large eggs - beaten

(C)
175 gm plain flour
1 teasp baking powder

(D)
100 gm butter - melted

Method:
  1. Beat (A) till thick using a balloon whisk.  Add in (B) , mix well.
  2. Whisk in (C) and lastly add in (D).
  3. Pour into paper cups and decorate with strips of prune on top.
  4. Bake in preheated oven at 180 C for 18 to 20 minutes.

  1. Thank you for sharing this recipe - I have already made 3 times. I also tried it with Dates and it tastes equally yummy.
