Hakka Fried Mee Teow




 Ingredient:

1 packet (320 gm) dried handmade noodle (Mee Teow)
150 gm chives, (ku chai), cut into 4 cm length
200 gm bean sprouts
3 hard taufu, cut into strips
100 gm dried prawns, chopped
chopped garlic
2 egg, fried into omelette and shredded

Seasoning:
Salt & pepper to taste

Method:
  • Blanch noodle in boiling water until cooked, drain and rinse with cold water, keep aside.
  • Fry the shredded dried taufu until golden.  Set aside.
  • Fry the dried prawns with oil until fragrant and crispy, set aside.
  • Heat wok with little oil, stir-fry the noodle in few portions until dry and fragrant.  Dish up.
  • Heat wok to saute garlic , add in chives, bean sprout, taufu, dried prawns and seasoning and stir well.  Pour in little water, add in the noodle and stir-fry until well mixed.  Adjust seasoning.
  • Add in the shredded omelette and serve.  5 servings.
