Lemon Poppy Seed Cake

Lemon Poppyseed cake







 Ingredients:

6 oz butter
4 oz cream cheese
3/4 cup sugar
3 eggs + 1 egg yolk
2 teasp grated lemon zest
1 teasp vanilla essence
6 oz flour
3/4 teasp baking powder
1/4 teasp salt
1/3 cup poppy seeds

Method:
  • Sift together the flour, baking powder and salt. Whisk in the poppyseeds.
  • Cream the butter and cream cheese till smooth and fluffy.  
  • Beat in the  whole eggs one at a time, then the egg yolks, lemon zest and vanilla.
  • Fold in the flour.  Spoon the batter into the prepared pan.  Bake in 180 C for 40 minutes or till done.
