Potatoe and Meat Croquettes

Japanese Croquettes

 Ingredients:

500 gm mashed potatoe

(A)
1 medium onion - chopped

(B)
100 gm minced pork or chicken or beef

(C)
1/2 cup carrot - chopped
1/4 cup sweet corn kernels

Seasonings:
1 teasp dashi sauce
1 teasp sugar
1 tablesp sake
1 tabsp  mirin
3 - 4 tabsp Japanese soy sauce
salt & pepper to taste

Coating:
Flour
1 egg - beaten
 Panko or breadcrumbs

Method:
  • Saute (A) in oil, add (B).  Stir fry till meat is cooked, add in (C).  
  • Stir fry till fragrant, add in seasonings and simmer till sauce is dry.  Remove.
  • Add the mince to the mashed potatoes and mix well.  Then roll into oblong shapes or patties shape.
  • Chill in the refrigerator for 15 - 30 minutes. 

  • Roll into the flour, then the egg and finally the breadcrumbs.
  • Chill again in the refrigerator for 20 minutes before frying.
  • Heat  a pan with 2 cm deep of  oil at medium temperature 
  • Shallow fry the croquettes until golden.
  • Serve with tartare sauce or chillie sauce or ketchup.

Korean Vegetable Pancake









 Ingredients:

Batter:


2 cups pancake mix or plain flour
2 cups water
2 eggs

(A)
3 cups cabbage - chopped
1 cup chives  - chopped
1/2 capsicum  - chopped
1/2 carrot  - chopped
1 onion - chopped
some fresh prawns - cubed (or any kind of seafood)

Method:

1.  In a large bowl, mix pancake mix, water and egg until it's smooth.
    (if you are using the pancake mix there is no need to season). If using
    plain flour,season with  salt and pepper to taste.
2.  Stir in (A). Let it rest for about 10-15 minutes.
3.  Heat a skillet over medium flame and a little oil.
    Pour about batter into the skillet, until the bottom is lightly browned.
4.  You can large or mini pancakes.
5.  Allow the mixture to cook well and brown on both sides, serve with soya sauce
    or chilli sauce.

Note:
You can use any type of vegetables, spring onions, bean sprouts, zucchini, fresh mushroom, etc.

Okonomiyaki

Okonomiyaki
Prepare batter.
Add all the vegetable & meat.
Cook over medium heat.
Flip over to cook the other side.
Dashi sauce
Bonito flakes, okonomiyaki sauce & mayonnaise.
Ingrediets:

1 cup flour
2 eggs
4 teasp  Dashi sauce
3/4 cup water
1 teasp sugar

 (B)
2 cups cabbage - chopped into small pieces
2 stalks spring onion - sliced
1/2 onion - diced
Prawns, cuttlefish or bacon - sliced

To serve:
Okonomiyaki sauce
Mayonnaise
Bonito flakes

Method:

1.  Put ingredients (A) into a large bowl mix well.  Then add in (B) and mix well.
2.  Heat a large frying pan, add a tablespoon of cooking oil
3.  Add a layer of batter to the pan.
4. Cook, covered, over medium-low heat for 5 minutes.
5.  Flip the okonomiyaki
6.  When the pancake is ready, place on a plate.
7.  Add a generous layer of okonomiyaki sauce on top.
8.  Add some mayonnaise. Finally add bonito flakes.
