Ingredients:
(A)
240 gm flour
200 gm sugar
70 gm cocoa powder
1 1/2 teaspoon soda bicarbonate
3/4 teaspoon salt
1/2 cup melted butter or vegetable oil
1 cup buttermilk or milk
2 eggs
2 teaspoon vanilla essence
(B)
1 cup warm coffee (2 teasp. coffee granules + 1 cup hot water)
Method:
- Preheat oven to 180 C.
- Place all the ingredients (A) into a mixing bowl.
- Mix at medium speed till well mixed. Add (B). Mix till smooth.
- Pour into greased 9 ins round pan or square pan.
- Bake for 45 - 50 minutes. Test with a skewer if it comes out clean , its done.
- Cool the cake completely before glazing.
100 gm chocolate block - chopped into small pieces
60 ml whipping cream
2 teaspoon Cognac or Brandy (optional)
- Place chocolate pieces in a bowl. Heat cream on medium high until it comes to a boil.
- Remove from heat and immediately pour cream over chocolate.
- Stir until completely mixed and glossy.
- Allow ganache to cool before pouring over cakes as a glaze.
