Prune Cupcakes |
Ingredients:
(A)
150 gm prunes - cut into small pieces
1 tabsp rum liquer
1 teasp vanilla essence
100 gm brown sugar
1 teasp soda bicarbonate
50 ml fresh milk
(B)
3 large eggs - beaten
(C)
175 gm plain flour
1 teasp baking powder
(D)
100 gm butter - melted
Method:
- Beat (A) till thick using a balloon whisk. Add in (B) , mix well.
- Whisk in (C) and lastly add in (D).
- Pour into paper cups and decorate with strips of prune on top.
- Bake in preheated oven at 180 C for 18 to 20 minutes.
Thank you for sharing this recipe - I have already made 3 times. I also tried it with Dates and it tastes equally yummy.
