Ingredients:
(A)
225 gm butter
(B)
160 gm castor sugar
5 eggs yolks
2 teasp vanilla essence
(C)
5 egg whites - whisk till stiff
(D) Sifted:
225 gm flour
1/4 teasp salt
1 1/2 teasp baking powder
2 tabsp. milk
1 1/2 tabsp cocoa powder
Method:
- Preheat oven at 180°C Line an 8-inch round cake tin or 10"x5" loaf tin with parchment.
- Cream (A) till light and fluffy.
- In a separate bowl, whisk the (B) till light.
- Add this into the butter and beat on medium speed till just incorporated.
- Fold in (C) into the egg yolk mixture in 3-4 batches.
- Fold in (D) and milk. Divide the batter into two, 3/4 in one batch and the 1/4 in another bowl.
- Sieve cocoa powder over the 1/4 batch and mix well.
- Pour plain batter into tin, spoon dollops of chocolate batter over the plain. Continue to fill up the tin and end with dollops of chocolate on top. Use a skewer to make marble effect.
- Bake for 40 minutes or until a tester inserted comes out clean.
